Grouper Recipes
Blackened Grouper
1⁄4 cup smoked paprika
2 tablespoons dried thyme
2 teaspoons onion powder
11⁄2 teaspoons kosher salt
11⁄2 teaspoons garlic powder
1 teaspoon ground black pepper
1⁄2 teaspoon dry mustard
1⁄2 teaspoon ground red pepper
1⁄2 cup butter, melted
2 pounds grouper fillets
1 tablespoon olive oil
3 lemons, halved crosswise
In a small bowl, stir together paprika, thyme, onion powder, salt, garlic powder, black pepper, mustard, and red pepper. Pour melted butter in a shallow dish. Dip each fillet in butter, turning to coat. Sprinkle both sides of fillets with spice mixture; pat gently to coat.
Add olive oil to skillet (oil should smoke); place fish in skillet. Cook, covered, until browned, 3 to 4 minutes. Turn, and cook, covered, until fish flakes easily with a fork, 3 to 4 minutes more. Carefully remove skillet from grill.
Place lemons cut side down on grill. Cook, covered, until charred, 3 to 4 minutes. Serve with fish.
Oven Baked Parmesan Grouper
2 lbs grouper fillets skinless fillets, cut into approximately 6-6 oz pieces, 1-inch thick
1 cup sour cream
1/2 cup grated Parmesan cheese
Zest of 1 lemon
1 Tbsp fresh squeezed lemon juice
1 tsp onion powder
1 dash hot sauce I used Tabasco sauce
1/2 tsp paprika
1/2 tsp kosher salt
1/4 tsp ground black pepper
Rinse the fillets and dry them with a paper towel.
Place the fillets in a single layer in a greased baking dish or on a baking sheet. Sprinkle salt and pepper on both sides of the fillets.
Combine the sour cream, grated Parmesan cheese, lemon juice and zest, onion powder, and Tabasco in a small bowl and mix well.
Top each fillet with the sour cream mixture and spread out to cover the top. Sprinkle paprika on the top.
Bake for 15-20 minutes for fillets 1-inch thick. If the fillets are thicker or thinner, it will take more or less time for the fish to cook.
Garnish with lemon wedges and parsley and serve immediately.
Oven Baked Parmesan Grouper
2 lbs grouper fillets skinless fillets, cut into approximately 6-6 oz pieces, 1-inch thick
1 tablespoon honey
1 tablespoon orange marmalade
1 tablespoon Florida’s Natural® Orange Juice
3/4 teaspoon Dijon mustard
1/2 teaspoon light soy sauce
1/8 teaspoon ground white pepper
3/4 pound grouper fillets
Preheat broiler.
Combine all ingredients except grouper, mixing well.
Place fillets on an oiled broiler pan and brush fillets with honey glaze to cover.
Broil 5 to 6 inches from heat for 4 to 5 minutes, until browned. Turn fillets, brush with honey glaze and broil an additional 5 minutes, or until the fish flakes easily.
